Tomato Paste
What to do with an over-abundance of fresh, summer tomatoes. Mix up the tomatoes for a unique taste, or use your favorite tomato. This recipe is using Black Cherry Tomatoes. I purposefully left the serving size blank, as how much you yield will depend on how many tomatoes you do. You can add some seasoning now, just be sure to mark your container with type of seasoning (Mexican, Italian, Mediterranean)

  1. Line baking sheet (with edges) with parchment paper. Pre-heat oven 250°

  2. slice tomatoes in half and place on sheet

  3. place in oven for two hours, rotate pan half way thru. If tomatoes are still “wet” after two hours, you can continue to dry, checking every 30 minutes and rotating pan.
