Lazy Man’s Beef Stew with Green Salsa
A slightly hot beef strew with a real Mexican taste. If you like a higher “heat”, use a few seeds from the jalapeno peppers. Using left over rice makes this a quick and easy recipe for any night of the week. Make large pots during the winter and can any leftovers for later use (leave out the rice to add when heating up the strew). The meat can be changed out for any other meat you wish, or leave meatless.

  1. Heat olive oil in large, heavy pan or dutch oven over meduim-high heat until the oil shimmers. Place stew beef in single layer in oil, and brown on all sides. Remove meat from pan.

  2. Cook and stir the onion in the hot pan over meduim – high heat until the onions is translucent and beginning to brown. Return meat to pan and stir in remaining ingredients. Cover and simmer over low heat, stirring occassionally, until the meat is tender, about 1 hour.
