Venison Meatloaf (A Thank You to Nathan)

With the rough weather we have been having as of late, I wanted to tell Nathan “Thank You” for all that he has done around here to keep us going, and getting our place to a resemblance of what we had. He has worked so hard to help get the garden back to something we could work with. He has helped keep the horses safe replacing fencing that we have lost, and now we have to deal with hail damage to the house from last nights storm. I just wanted him to know how special he is and how much he means to me. So, I decided to fix one of his favorite meats, Venison. We had some ground venison in the freezer, and I adopted this recipe for Meatloaf. Served with Corn.

 

Ingredients:

  • 1 pound ground venison
  • 1 pound bulk pork sausage
  • 1/2 onion, minced
  • 1 green pepper, minced
  • 1/2 cup rice
  • 1 egg ( I used a duck egg given to us by our neighbors)
  • 1 teaspoon Everglades Seasoning

Preheat oven at 350°, bake for 45 minutes. Last 15 minutes of cooking, add any topping you choose. I used some salsa and cheese.

Nathan’s reaction to this meatloaf ~That was some G-O-O-O-O-O-D meatloaf baby!  Now, that makes me feel good!

    We love venison! For some reason I have never thout about making meatloaf with it firm some reason. I will have to try this next time we cook it up.

    It really did add some zest to the loaf, and I had to share a bit with my neighbor, who also thought it was excellent! I love to try new recipes, or spice up recipes that are usually ordinary.

    I hadn’t thought about doing a meatloaf with Venison before either. We had had burdgers a couple of nights prior, and I had some of the venison, and some sausage left from a previous meal, and thought it would make a good meat dish.
