Nobody could say it better then this true American Cowboy, John Wayne. I sit here and wonder what happened to our Nation. As we lose more rights to say what is on our minds, “for fear of offending others”. As we lose our God, to others who come after us. Was our Nation not founded on God?  Monuments that have stood for decades to give honor to those who fought for this country, and being taken down. Our Moment of Silence has been removed from the schools, along with the Pledge of Alligence, for fear of offending others.

The way I see it, the “others” have come to our country, have taken a pledge to defend her, and now they want to remove all that made us great! If we continue to allow this to happen, then we will no longer be the country we are meant to be. Strong, Proud, Free, God-Loving, and most importantly, INDEPENDENT!

I just had to share this video with all of you! Talk about having fun! Makes you wonder where this kid will be in 10-20 years from now. Will we be listening to him on the radio? Who knows, with the right nurturing, anything is possible. Dreams do come true every day!

Mexican Meatloaf (Freezer-friendly)

I got this recipe from a horse list taht I belong to, and it is sooo good, I just had to share it with you !

Mexican Meatloaf (Freezer-friendly)

Turn up the heat up on this zesty meatloaf by adding hot green chilies or chipotle peppers. I swapped out the tomatoe sause for our home made salsa, to make it a true home-made meatloaf!

Mexican Meatloaf

  • 1 spray(s) cooking spray
  • 1 1/2 pound(s) uncooked lean ground beef (with 7% fat)
  • 1 cup(s) rolled oats
  • 1 medium onion(s), finely chopped
  • 1/2 tsp garlic powder
  • 4 oz canned green chili peppers, mild,
  • diced 1 large egg(s)
  • 1 Tbsp chili powder
  • 2 tsp ground cumin
  • 8 oz canned tomato sauce
  • Instructions:
    Preheat oven to 375°F. Coat a loaf pan with cooking spray. Combine all ingredients, except half of tomato sauce, together in a large mixing bowl. Set remaining tomato sauce aside. Spoon meatloaf mixture into prepared pan and smooth top. Bake for 60 minutes. Spoon remaining sauce over meatloaf and cook 5 minutes more. Slice into eight pieces.

    Freezing and thawing instructions: If freezing, bake meatloaf for 60 minutes only. Cool, remove from pan, wrap in foil and freeze. When ready to eat, thaw in refrigerator and reheat in oven at 350°F for 30 minutes. Top with 1/2 cup of tomato sauce and bake for 5 minutes more.

Winter Rains, Superbowl and Nascar

We all know rain is good, but I’m done with it! Seems like I haven’t seen the sun in two weeks, our ground is so wet, we squish when we walk! The horses are in mud up to their ankles when they eat, the dogs are stuck inside and driving me nuts!

I know rain is good, but when will we see the sun again? I miss the brightness, the warm feeling, the natural heat. I want my SUN BACK!

Our pond is overflowing, our dry creek is turning into a river. The days are getting longer, but, my sun is still missing.

I have to wonder if this weather has anything to do with our geese and ducks not coming back yet this year. I sure do miss those guys! We still have lots of turkey and deer, and they are definitely a joy to watch.

We lost a lot of hay and some crops last year because of the late rains. Now, with spring fast approaching, it looks like we are going to be wet for a while longer. The forecast for the next week ~ yep, you guessed it! More rain!

We can’t ride, can’t work the horses for the mud and wet ground. So, we sit and wait.

On an up side ~ yes, there actaully is an upside to this rain! Superbowl is tomorrow. Now, I’ve always been a Colts fan, but I’ll be honest with you, I want to see The Saints win. New Orleans has been through a lot the last couple of years. And the Saints Team has been a big part of their recovery. They deserve something good. They have fought a hard battle, and have proved themselves worthy of going to the Superbowl!

AND, another plus, Nascar is about to start back up. We are usually in Daytona about now, well, at least Nathan is. But, he retired from the track, last year was his last. After 28 years of working as a peramedic on the track, he decided it was time for him to leave.

Personally, I’m looking forward to Danica Patrick driving in the Nationwide races. I’m hoping Jr has a better year, and stay out of the wall. I want to see Jimmy Johnson knocked off his high horse (don’t get me wrong, he’s a good driver, but I want to see someone else win this year!) I’m looking forward to watching Clint Bowyer driving his clean races.
